If you’ve got a sweet tooth, this parfait should be your next go-to recipe. One of the best parts about this superfood pudding parfait is that you can have it for breakfast, dessert, or a snack! Without worrying about sugars, as this parfait is sweetened naturally.
“Parfait” comes from the French word meaning “perfect” and these days means a layered dessert with a base, whipped cream or yoghurt and toppings. This recipe is a much healthier twist that’s good for any time of day.
You will need to prepare a simple chia seed pudding ahead of time. One serving is simple. Mix up the following ingredients in an airtight container and refrigerate for at least 6 hours:
2 tablespoons chia seeds
½ cup dairy-free milk
1 tsp maple syrup (or sweetener of choice)
Once your chia seed pudding is ready, you can start the parfait.
Ingredients:
½ cup chia seed pudding
2 Tbsp Almonds
1 Tbsp Organicule Superfoods Hemp Hearts
1 tsp Flax seeds (or seed of choice)
2 soft Dates, pitted
½ - ⅔ cup Strawberries
1 Tbsp Organicule Cacao Nibs
Method:
In a blender or food processor, pulse almonds until finely chopped. Add in hemp hearts and seeds and pulse until finely chopped. Add dates and pulse again until combined. Spoon into the bottom of a cup and gently press down with spoon until it’s an even layer.
Add ½ cup chia seed pudding to form the second layer.
In food processor, puree strawberries. Pour on top of chia seed pudding.
Top with cacao nibs and serve. Can keep in the refrigerator in an airtight container for up to 24 hours.
